2 cups old-fashioned rolled oats 1/3 cup honey or maple syrup 3 tbsp coconut oil, melted 1 cup raisins or dried cranberries 1 tsp vanilla extract
1 cup nonfat plain Greek yogurt 1/2 cup sunflower seeds or pumpkin seeds 1/4 cup sesame seeds 1/4 cup shredded unsweetened coconut
Preheat oven to 350°F and line an 8x8 pan with parchment paper.
In a large bowl, mix together the oats, honey/maple syrup, coconut oil, raisins/cranberries, and vanilla.
In a separate small bowl, stir together the Greek yogurt.
Add the yogurt to the oat mixture and stir well to fully incorporate.
Fold in the seeds and coconut.
Transfer the granola mixture to the prepared pan and press down firmly to pack it in evenly.
Bake for 20-25 minutes until lightly browned. Remove from oven and let cool completely before cutting into bars.
Lift bars out of pan using parchment overhang and cut into squares. Store in an airtight container for up to 1 week.
