Spicy Salmon Sushi Bake Recipe

1 lb salmon fillet 1⁄4 cup soy sauce 2 tablespoons brown sugar 1 tablespoon rice vinegar 1 teaspoon grated ginger 1 garlic clove, minced 1⁄4 teaspoon red pepper flakes

3 cups cooked sushi rice 1 avocado, sliced 1 cucumber, sliced Sesame seeds, for garnish

Preheat oven to 400°F. Line a baking sheet with parchment paper.

In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, ginger, garlic, and red pepper flakes. Set aside.

Place the salmon on the prepared baking sheet. Brush the soy sauce mixture evenly over the salmon.

Bake for 10-12 minutes until the salmon is cooked through. Flake the salmon into bite-sized pieces.

In a 9x13 inch baking dish, evenly spread the cooked sushi rice. Top with the flaked salmon pieces in an even layer.

Arrange the avocado and cucumber slices over the salmon.
