5 oz mixed greens 1⁄2 cup chickpeas, rinsed and drained 1⁄2 avocado, diced 1⁄4 cup feta cheese, crumbled 2 tbsp roasted unsalted sunflower seeds 1⁄4 cup dried cranberries 1 tbsp extra virgin olive oil 1 tbsp lemon juice
2 tbsp olive oil 1 tbsp lemon juice 1 tbsp apple cider vinegar 1 tsp Dijon mustard 1 garlic clove, minced Salt and pepper to taste
In a salad bowl, add the mixed greens.
Top with chickpeas, avocado, feta, sunflower seeds and cranberries.
In a small bowl, whisk together the olive oil, lemon juice, vinegar and honey. Season with salt and pepper.
Drizzle the dressing over the salad.
For the salad dressing: In a small bowl, whisk together the olive oil, lemon juice, vinegar, mustard, garlic and salt/pepper.
Drizzle the dressing over the salad just before serving.
Toss the salad to evenly coat everything with dressing and serve immediately.
