2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup unsalted butter, softened 3/4 cup brown sugar 2 large eggs 3 very ripe bananas, mashed 1/3 cup plain Greek yogurt
Preheat oven to 350°F. Grease a 12-cup muffin tin or line with muffin liners.
In a medium bowl, whisk together the flour, baking soda and salt.
In a large bowl, beat the butter and brown sugar with a mixer until light and fluffy. Add the eggs one at a time, beating well after each addition.
Mix in the mashed bananas, Greek yogurt and vanilla until combined.
Add the dry ingredients to the wet ingredients and mix just until combined. Fold in the walnuts.
Divide the batter evenly among the prepared muffin cups.
Bake for 18-20 minutes until a toothpick inserted comes out clean.
